Savoury Clam

Savoury or Varnish Clam (Nuttalia obscurata) A new clam fishery that has gained a reputation with chefs on the West Coast as an excellent pasta or seafood salad clam. Its shell is thinner than the manila clam and has a silver or white coloured center with a dark brown coloured rim. Savoury Clams are usually included in dishes that include various types of shellfish but can also be eaten on their own. Its meat has been rated to nearly equal to the quality of the treasured native razor clam. Shelf-life 14 days. Available March through December. Mac's Standard Size Grades: Regular Size: 54 pieces per lb., Large: 35 pieces per lb.
